I intend to start my developing my baking skills soon. I tried making carrot cake before and it turned out to be disastrous. So much for the effort of grating the carrots... I tried to stay away from baking for a while, until recently I found out how reliable Baking Mix were. I know, I know, baking mix are unhealthy and who doesn't know how to bake using them? I ask for your forgiveness in case you find that I am violating the law of knowing how to bake with baking mix. I figured this is probably where I can slowly learn the process of correct measurement, correct oven temperature, portion control etc.
Lately I discovered "Greens" brand baking mix - and I have tried only the Vanilla flavour so far. It was my favourite ever since. It comes with a packet of icing mix too! I tried making plain vanilla ones umpteen times now and recently I tried blending it with ripe bananas and it turned out to be delicious Banana Cupcakes.
- 2 eggs (whole)
- 150ml (2/3 cup) milk
- 60g (or 3 tablespoons) of butter/soft margarine
And of course I mash some bananas and also cut them into slices. In total I used 2 bananas.
The steps is basically to first, preheat the oven on 180C degrees. Then I got ready my muffin pan and lined them up with cupcakes holder. Then I got a big mixing bowl and pour all the flour mix in, including the ingredients stated above. I got a hand mixer, set it to low speed and gently mix all the ingredients together until they are well mix. Then I set the speed up higher, and mix them up till the mixture became thicker and creamier, that's when it's ready to be pop into the oven.
As my muffin pan size is quite large (about the size of a fist), each cupcake measured about 2 1/2 tablespoons of mixture. Then gently I top them up with sliced banana (about 1 or 2 slices, depending on the diameter of the banana slices). I placed the cupcakes into the oven for about 20 minutes. You can see them rising in the oven and turned slightly golden brown and that's when you take them out from the oven.
